Sigma mixer's double ∑-shaped blades rotate at low speed and high torque in opposite directions, which can continuously squeeze, stretch and tumble the material. It is very suitable for mixing and kneading such "dough-like" and "paste-like" food materials, avoiding dead corners and local clumping.
Flavorings and fragrances require extremely high consistency and stability in flavor. Uneven mixing in certain areas can lead to uneven aroma distribution, significant differents in the final product's taste, and poor batch-tobatch stability.
Sigma mixer does not use high-speed impact; instead, it employs gentle yet powerful shearing and tumbling, achieving highly uniform mixing without damaging the flavor molecules or introducing excessive air.
Sigma mixer is typically equipped with a jacketed heating/cooling system (heat transfer oil or hot/cooling water), which enables:
- Stable temperature rise, facilitating syrup softening.
- Process temperature control, protecting flavor activity.
- Cooling and getting, facilitating subsequent shaping or unloading.
